Little Rebel Coffee Roastery operates a specialty coffee production facility within a converted warehouse in the Dromana Industrial Estate. The business focuses on direct ethical sourcing and meticulous roasting to supply over 60 cafes and restaurants across the Mornington Peninsula.

Tucked away in the Dromana Industrial Estate, a converted warehouse serves as the operational headquarters for one of the Mornington Peninsula’s most renowned specialty coffee producers. The scent of roasting beans drifts down Collins Street, drawing locals and wholesale clients alike to Little Rebel Coffee Roastery.

Inside the space, gleaming roasting machinery sits alongside vintage Harley Davidson motorcycles. A striking mural by artist Steen Jones anchors the back wall, setting a relaxed, industrial tone for the facility.

A pursuit of the perfect roast

The business began out of a desire for better quality in the cup. Founders Peter and Trish Roberts initially opened a cafe in nearby Mount Martha and found themselves unsatisfied with the wholesale beans available. They purchased a commercial roaster and began experimenting with their own profiles.

Eventually, they relocated to their purpose-built Dromana facility to focus entirely on the craft. Today, Little Rebel supplies over 60 cafes, restaurants, and wineries across the region.

At the centre of the operation is a world-class Giesen roasting machine imported from Holland. Different beans demand specific times and temperatures depending on how they were grown, harvested, and processed at their origin. The roasting team monitors every batch carefully, ensuring absolute consistency across their diverse product range.

Sourcing and sustainable practices

Sourcing remains a critical component of the Little Rebel philosophy. The roastery works directly with farmers in Colombia, Brazil, and Honduras to secure premium, ethically grown crops. They pay a premium for high-quality green beans to guarantee sustainable farming practices and unique flavour profiles, including an exclusive organic Honduras coffee.

Their signature house blend, known as Black Sheep, combines Brazilian natural and Colombian washed beans to create a full-bodied espresso with prominent notes of toffee, caramel, and brown sugar. Alongside their staple blends, the team regularly roasts small-batch single origins and produces a highly sought-after cold brew.

A community coffee destination

While primarily a wholesale operation, the Dromana warehouse welcomes the public during weekday mornings. The space invites patrons to engage directly with the coffee-making process in a casual, welcoming environment. Visitors can watch freshly roasted beans pour from the cooling tray while ordering an espresso at the tasting station.

For those who miss the standard trading hours, the business provides an automated vending machine outside the factory. The dispenser operates 24 hours a day and is restocked daily with fresh bags of coffee, ensuring residents never have to start their morning without a proper brew. It is a highly practical touch that reflects the thoughtful, community-focused approach of a local business dedicated entirely to the perfect cup.
